Vegan Banana Bread

We need to talk about Banana Bread.

Everyone loves banana bread. Amirite?

So let me give you a run down on this particular recipe.

Its not fussy, its adaptable (think, nutty or chocolaty OR both).

Its the kind of thing that fills your house with the smell of caramelly, banana bread goodness.

You ready for it?

Ingredients:

  • 3 large bananas (the gooeyer, almost blacker- the better!)
  • 75g vegetable oil or sunflower oil, plus extra for your pan
  • 100g brown sugar
  • 225g plain flour (or use self-raising flour and reduce the baking powder to 2 heaped tsp)
  • 3 heaped tsp baking powder
  • 3 tsp cinnamon
  • 50g chocolate or nuts (optional)

Method:

  1. Heat oven to 200C (I have a gas oven- and this is the standard heat I use. Go with the heat you know- 180 should do in a fan oven)
  2. Mash 3 large ripe peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
  3. Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon and combine well. Then add 50g chocolate or nuts, if using.
  4. Bake in a greased, lined loaf tin for 20- 30 minutes. Check and cover with foil if the cake is browning.
  5. Bake for another 20 minutes, or until a skewer comes out clean.
  6. Allow to cool a little before slicing. It’s delicious freshly baked, but absolutely irresistible topped with nut butter and fresh berries.
